Chicken stuffed with dried tomato and mozzarella

Ingredients (8 serving)

  • 8 chicken fillets
  • 1/2 cup mozzarella cut
  • 1/2 cup sun dried tomatoes
  • 1/4 cup parmesan cheese
  • 1/2 cup baby spinach
  • 1/4 onion slicede
  • 1/2 cup bread crumb
  • zest of lemon
  • 1 tablespoon of olive oil
  • freshly ground pepper
  • peeled toast culinary
  • cooking spray


Put the peeled toast and grated cheese in a shallow bowl. In another bowl, add the olive oil, lemon juice and pepper. Preheat the oven to 220 ℃. Spray slightly a non-stick baking pan with a cooking spray. Place each fillet on a working surface, such as a cutting board. Divide tomato, mozzarella, spinach and onion over each fillet. Wrap the fillets like rolls and join the seam with a toothpick. Transfer each roll in the bowl with the olive oil and then into the bowl with the grated toast. Spray the surface of the rolls with cooking spray. Bake for 25 minutes or until golden brown and cooked. Put on 8 dishes of one roll.
